With promises of milder Spring evenings still months away, there's plenty of time to enjoy hearty, comforting soups and stews. This week, we share a recipe that's seen us through many a cold Winter night: Lentils Provencal.

These small, speckled green legumes known as Le Puy lentils—or French lentils—have a subtle taste and are high in fiber, folate, iron and protein, making them a nutritional powerhouse for plant-based meals, but also the perfect side dish for duck confit or Toulouse sausages.
